RECIPE TIME!!!

I've been wanting to bake for quite some time now. But my schedule has been quite busy.. And baking just wasn't my number one priority. But I finally got to it.

I made some Protein Chocolate Muffins!

I tried a little bit of the batter.. And it tasted pretty good. I brought the finished product to work for my coworkers to try. And I would say it was a success! Everyone seemed to love them! One of my coworkers kept coming back and grabbing a few throughout the time. LOL!

Ingredients:

-8 large egg whites (264g)

-2 tbsp melted coconut oil (28g)

-1/2 cup greek yogurt (114g) *I used vanilla

-1 cup protein powder (100g)

-2 tbsp cocoa powder (10g)

-1/4 cup almond meal (28g)

-2 heaping tbsps stevia

-1 tsp baking powder

-pinch of salt

Bake at 325F.

I made mini muffins so they only took 10-12 minutes to bake.

I left them looking slightly under cooked because I didn't want them to be dry. Then I stored them in the fridge.

Okay...

So time to talk about something not as fun as chocolate muffins... My weight!

As you know.. I have to cut to 114 for my meet April 15-16.

And I have been sitting at 125 this week. I have added cardio back in. I have also been eating under my macros. But NOPE! My weight wants to stay.

If I didn't have to make weight.. Then it wouldn't bother me one bit. I feel good. Looks wise and performance. Since my meet I have been on point with my eating.. And I can tell. I am definitely looking leaner.

Tony doesn't seem to be worried about where my weight is at. His main concern is my strength. So he said.. That if we need to just do a bigger water cut.. Then so be it.

So I guess I should stop stressing it.
