Vegan Holiday [AMAZING] Bars


Okay... So... I have made this recipe before. But it was non-vegan.

I loved the recipe so much.. I wanted to give it a try vegan, so the SU family could try them.

And when I finished baking the cookie bars.. I was a little worried. I didn't like the way they looked. The color was a bit weird. And they didn't smell very good either. They didn't have that delicious cookie aroma.

THE FROSTING THOUGH! I know that was good. I definitley tried that before giving them to my members to taste. LOL. I do always let them know that I haven't tried my treats yet. They know that I only have limited cheats. :)

And when I did finally get my cheat meal.. OOOMMMMGGGG! I was so happy and kind of impressed! These cookie bars were "to die for!" Those were my words to one of my members!!! SO GOOD! Writing about them now makes me want to make some & eat like the entire batch! LOL.

Here is the recipe for you guys!

INGREDIENTS:

Cookie Bars:

-1/2 cup softened coconut oil

-1/2 cup brown sugar

-1/2 cup coconut sugar

-1/3 cup pumpkin pure (to replace 1 egg)

-1/4 cup almond milk

-1 tsp vanilla extract

-3 cups flour

-1 tsp baking powder

-1/2 tsp salt

-1/2 tsp nutmeg (or cinnamon)

Frosting:

-1/2 cup softened coconut oil

-1/2 tsp vanilla

-1/4 cup almond milk

-1/4 tsp salt

-3.5 cups powdered sugar

-Sprinkles (optional)

INSTRUCTIONS:

1. Beat the oil and sugars until creamy. Add the pumpkin, milk, and vanilla and beat again.

2. Stir together the flour, baking powder, salt, and spice of choice. Slowly add it to the oil mixture until everything is mixed in. Press it into a pan lined with parchment paper (I used a 9x9 pan). Bake at 375 degrees for 15 mins. *Do not over bake, each oven is a little different.

3. FOR THE FROSTING: Beat the oil until creamy. Add the vanilla, milk, and salt and beat again. Slowly add the powdered sugar until everything is creamy. Put on cooled cookie bars (I used a cute, decorative tip).

4. Cut and enjoy :)
