Okay.. So I made one of the best dinners, ever, the other night!
As you man know.. I am starting my prep soon (May 20th to be exact).
So.. I decided to make homemade dinner and dessert for me and Tony.
I am going to share a healthy version of what I made :)
1. BUTTERNUT SQUASH RISOTTO (carb source)
This took the longest to cook because I used a crock pot.
You will need:
-About 2 cups of cut up butternut squash
-3/4c of rice (try to get arborio rice)
-2 cups of chicken broth (or vegetable broth)
-Season how you'd like.. I just used salt and pepper
-You can sprinkle some feta cheese over it if you'd like (this will add calories from fat)
*Cook on high for 3 hours. Keep an eye on it. You want the rice to be soft.
*4 servings.. Unless you are me and Tony.. Then it only serves 2. Hahaha.
2. PORK CHOPS WRAPPED IN BACON (protein source)
This cooked pretty fast. Do not over cook the pork chops or else they will be very dry.
I got so lucky.. It was my first time making pork chops.. And they kinda turned out perfect :)
You will need:
-4 pork chops
-Pack of TURKEY BACON (because it is leaner)
*Preheat the oven to 425.
*Microwave the bacon for 3ish minutes. You just want the edges to start to curl.
*Season the pork chops how you'd like
*Wrap the pork chops with the bacon strips.
*Bake for 9-12 minutes.
3. SALAD ON THE SIDE (veggies)
I just got a premade salad from the store. Simple.. And quite tasty.
If you don't want salad you can cook some veggies (preferably green).
SO EASY! & DELICIOUS!!!
