[Semi-Healthy] Cake Balls


OKAYYYY YOU GUYS! HERE IS A BOMB.COM RECIPE FOR YOU!!!!

All my SU gym members loved them so much!

And I thought they were pretty good too!

I personally would like to add something to the cake.

I feel like it needs a little extra flavor or texture. I will have to experiment with them.

But here is the recipe that I made, for now :)

CAKE:

-1 cup coconut flour

-4 tbsp unsweetened cocao powder

-1/2 tsp salt

-1/2 tsp baking soda

-8 eggs

-4 tbsp olive oil

-1 cup honey

Combine the wet. Combine the wet. Mix the dry into the wet.

Bake at 350 degrees F for about 25 minutes (or until toothpick comes out clean).

FROSTING:

-3/4 cup heavy whipping cream

-8 oz cream cheese

-1/2 cup honey

Combine all ingredients and let it sit in the fridge to thicken while the cake is baking.

Once the cake is done, you are going to let it cool completely.

Then you will crumble the cake into a large bowl. & mix the frosting into the cake crumble.

YEP!! It is going to be messy!!! EMBRACE IT! LOL!

From the cake/frosting mixture into balls. I like to use a small cookie scooper.

Freeze the balls.

Then you will melt whatever kind of chocolate you want to coat the cake balls with.

I used white chocolate and white peppermint chocolate. I have also used chocolate before. You can use peanut butter, butterscotch, etc... Really whatever kind of chips you want!!!!

(mmmm.. Now I'm getting hungry)

You will melt the chips with either butter or coconut oil. In 30-45 second incraments.

Dip the cake balls into the melted chocolate.

Add sprinkles (if wanted).

Then freeze again, until you want to eat them! :)
